100g grated extra mature cheddar
110g almond flour
60g unsalted butter
1 tsp gluten free baking powder
4 medium eggs
Seasoning – pinch of salt, pepper, dried mixed herbs or chilli flakes.

1. Pre-heat the oven to 190°C.
2. Mix all the dry ingredients in a bowl, add the butter and combine.
3. Add the eggs and mix well.
4. Add tablespoons of the mixture into a buttered muffin pan.
5. Bake for 12-15 minutes until browned on top and cooked through.
6. Devour hot with lashings of butter!
