Makes 4:
25g leeks
25g mature cheddar cheese
1 medium egg
1 tbsp double cream
1 Keto Bread Roll
Salt & Pepper
1 tbsp olive oil

1. Place all the ingredients (except the oil) into a blender and blitz to combine.
2. Heat the oil in a large frying pan on a medium heat until hot.
3. Divide the mixture into 4 evenly sized pancakes.
4. Cook for 3-4 minutes on low-medium heat.
5. Turn the pancakes and cook on the other side for a further 3-4 minutes until golden.
6. Serve with a green salad.
